Long before hungry Badgers could customize their own meals at endless venues, they had one option: Der Rathskeller. When Memorial Union opened in 1928, the Rathskeller quickly became the social heart of campus, hosting movie nights, dances, and other student gatherings. Since then, Wisconsin Union Dining has grown to include more than 30 cafés, markets, and restaurants across campus. Some have become UW staples, such as the Brat Stand and the Sett Pub, which opened in 1987 and 2011, respectively, while others have come and gone as tastes and needs have changed. (Rest in peace, University Club.) The Rath’s menu has had its eras too, from 25-cent liver sausage sandwiches and $1 trophy burgers to Southwest black bean burgers handcrafted by the Union’s first chef-in-residence. The Wisconsin Union Dining team’s newest offering, Pedone Pinsa, opened this week in the Wisconsin Institute for Discovery, bringing Roman-style flatbreads called pinsa to campus. Each pinsa cooks in about 90 seconds, and the menu will rotate monthly with different flavors and ingredients. And while there may not be a Daily Scoop next door serving orange custard chocolate chip for dessert, Pedone Pinsa will serve orange cream gelato.
