MADISON, Wis. — University of Wisconsin-Madison alumni in the Twin Cities area will celebrate the founding of the university with a talk from a food science expert on Saturday, May 3.
Richard Hartel, professor of food engineering at UW-Madison, will present his lecture, “The Science of Chocolate” at the Wisconsin Alumni Association: Twin Cities Chapter Founders’ Day event.
The Founders’ Day event will start at 5:30 p.m. at the Edina Country Club, 5100 Wooddale Avenue, in Edina. News media are welcome to attend. For more details, visit

Hartel’s research projects include controlling phase transitions (ice, sugar, fat and air) in ice cream and understanding and controlling bloom formation in chocolates and coatings. He has authored or edited eight books, has four others in the works, and holds three patents. He has won numerous awards including the Dairy Foods Research Award and the 2007 Maurer Extra Mile Award from the College of Agricultural and Life Sciences at UW-Madison.
Founders’ Day 2008 is presented in cities nationwide by the
Wisconsin Alumni Association, a nonprofit organization, in cooperation with the
University of Wisconsin Foundation.
These events are hosted annually by UW-Madison alumni chapters to bring the latest in
University of Wisconsin research to alumni in their hometowns, raise funds for student scholarships and celebrate the founding of the university. Proceeds from the Wisconsin Alumni Association: Twin Cities Chapter Founders’ Day event will benefit the chapter's local scholarship fund.
Participation and membership in the Wisconsin Alumni Association and its chapters are open to all alumni, students and friends of UW-Madison.
