WAA: OC Chapter Founders' Day 2012

Since 1924, the Wisconsin Alumni Association has hosted Founders’ Day celebrations in honor of UW-Madison’s beginnings and first official class in 1848.

These alumni events bring the best of the UW to you, from academic discoveries to time-honored traditions that sustain things close to Badger hearts and minds — healthy environments, respectful communities, access to a UW education, interest in lifelong learning, an understanding of UW history and advocacy of the Wisconsin Experience. Join other UW-Madison alumni at Founders’ Day as we celebrate and continue the traditions that make us proud Badgers.

At this year's Founders' Day, explore the meaning behind the Wisconsin Idea. Then, discover how UW-Madison puts it into action – improving lives beyond the classroom through teaching, research, outreach and public service.

Richard Hartel, Ph.D.
Professor, Food Engineering

About Your Speaker Since joining the Department of Food Science at UW-Madison in 1986, Rich Hartel has taught several food-processing classes as a professor of food engineering. An expert on candy and candy-making, and affectionately known as “the chocolate guy,” Hartel will bring his expertise and plenty of samples — from chocolate liquor to Lindt — to this Founders’ Day event. Hartel has co-authored textbooks on ice cream and candy-making and helps teach the annual Resident Course in Confectionery Technology held every summer at UW-Madison. His primary area of research encompasses food engineering with a particular emphasis on phase transitions in foods. Some of his recent projects include studying and characterizing the numerous types of bloom that occur in chocolates and compound coatings. He’s also been characterizing the crystallization kinetics of lipids of importance in chocolates and compound coatings, particularly the effects of minor impurities and the catalytic effect of particulate additives.
