About Your Speaker
Since joining the Department of Food Science at UW-Madison in 1986, Rich Hartel has taught several food-processing classes as a professor of food engineering. An expert on candy and candy-making, and affectionately known as “the chocolate guy,” Hartel will bring his expertise and plenty of samples — from chocolate liquor to Lindt — to this Founders’ Day event. Hartel has co-authored textbooks on ice cream and candy-making and helps teach the annual Resident Course in Confectionery Technology held every summer at UW-Madison. His primary area of research encompasses food engineering with a particular emphasis on phase transitions in foods. Some of his recent projects include studying and characterizing the numerous types of bloom that occur in chocolates and compound coatings. He’s also been characterizing the crystallization kinetics of lipids of importance in chocolates and compound coatings, particularly the effects of minor impurities and the catalytic effect of particulate additives.
